Upon receiving your caviar, place it in the coldest part of your refrigerator, ideally just around the freezing point. For maximum freshness and enjoyment, consume your caviar soon after opening, ideally within three days. This ensures you experience the full flavor profile at its peak.

Caviar is versatile and elevates any dish it accompanies. For a traditional presentation, pair it with crème fraîche, lightly toasted blini, and perhaps a slice of lemon for a touch of acidity. Caviar also pairs beautifully with champagne or high-quality vodka, which cleanses the palate and enhances the exquisite flavors of the caviar.

Black caviar is renowned not only for its exquisite taste but also for its rarity and the labor-intensive process required to produce it. The cost is driven by several factors:

• Rarity: Sturgeon, the fish from which black caviar is harvested, take many years to mature and produce eggs. Some species are also endangered, making their eggs even more precious.
• Harvesting Process: Harvesting caviar requires significant expertise and careful handling to ensure that the eggs are not damaged and retain their quality and flavor.
• Regulation: Due to the overfishing and endangerment of sturgeon, strict regulations are in place to manage sturgeon farming and caviar production, which can increase production costs.
• Quality and Purity: High standards of cleanliness and quick processing are essential to prevent spoilage and maintain the caviar's premium quality, adding to the overall cost.

While freezing caviar can extend its shelf life, we do not recommend freezing black caviar as it can significantly alter its texture and flavor. Freezing may cause the delicate eggs to burst or become too soft, which diminishes the quality of the experience.

To enjoy the optimal taste and texture of caviar, it should be stored in the coldest part of your refrigerator and consumed within three days of opening. If you must extend its shelf life, ensure it is stored properly in a sealed container at temperatures just above freezing, ideally between -2°C and 2°C.
